250g spiny gourd, sliced
1 onion, chopped
2 cloves of garlic, minced
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
2 tablespoons oil
Fresh coriander leaves, chopped (for
garnish)
Method:
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add onion and garlic and sauté until they
are golden brown.
Add spiny gourd and sauté for 2-3 minutes.
Add coriander powder, turmeric powder, red
chili powder, and salt. Mix well.
Cover the pan and cook on medium heat for
10-12 minutes, or until the spiny gourd is tender.
Garnish with fresh coriander leaves and
serve hot with rice or roti.

250g spiny gourd, sliced
