Turnip recipe:
Ingredients:
4 medium turnips, peeled and chopped 1-inch pieces
2 tablespoon oil
1 tsp clarified butter
3 nos dry red chilies
¼ tsp carom seeds
¼ tsp nigella seeds(kalonji)
1 teaspoon cumin seeds
1 tsp fenugreek seeds
2 green chilies chopped
1 medium size onion, chopped
1 teaspoon turmeric powder
Salt to taste
2 medium size tomatoes, fine chopped
1 tbsp green coriander stems, minced
½ tsp kitchen king powder/ Sabji masala
1 tsp red chili flacks
1/8 teaspoon garam masala
Fresh coriander leaves for garnish
Instructions:
In a wok, heat oil and clarified butter over medium heat.
Add dry red chilies, carom seeds, nigella
seeds, cumin seeds, and fenugreek seeds, and cook until fragrant, about 30
seconds.
Add chopped green chili, and sauté for a while.
Add chopped onion and cook until golden
brown.
Add the chopped turnips, and turmeric, and Stir
to coat the turnips with the turmeric well.
Add salt and red chili flacks, mix it for a
while, and cover the pan with a lid for about 3 minutes.
Open the lid after 3 minutes, stirring twice,
and make a gap in the Centre add chopped tomatoes and stems of coriander, cover
it again, and cook for 5 minutes.
Open the lid and mash the tomatoes at the
stage well, and mix it for 2 minutes.
Add kitchen king masala and garam masala, and
coriander leaves and mix it well.
Switch off the flame and serve hot with
roti, paratha, and a side dish of rice and dal.
