Here is a simple recipe for bottled gourd
raita:
Ingredients:
2 cups grated bottle gourd
1 tsp ghee or oil
1 cup plain yogurt
1 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
1/2 teaspoon roasted cumin seeds
1 green chili, finely chopped (optional)
1 tablespoon chopped mint leaves (optional)

Instructions:
Squeeze out any excess water from the
grated bottle gourd and set it aside.
In a saucepan add 1 tsp ghee or oil, and let
them heat well.
Add grated bottled gourd and sauté until becomes
dry, for 5 minutes on low- medium flame.
Let it cool down completely.
In a bowl, whisk the yogurt until smooth.
Add the sautéed bottle of gourd, cumin
powder, coriander powder, salt, and green chili (if using) to the yogurt and
mix well.
Taste and adjust the seasoning if
necessary.
Garnish with roasted cumin seeds and
chopped mint leaves (if using).
Serve the bottled gourd raita chilled as a
side dish with rice or roti.
