Gobi Ka Paratha (Cauliflower Paratha):
Gobi ka paratha is a popular Indian

Ingredients:
For Stuffing:
300-gram Cauliflower, grated and squeezed
1 tablespoon chili flakes
2 Green chilies, chopped
½ inch ginger, grated
Salt to taste
Fresh coriander leaves
For Dough:
2 cups wheat flour
1 teaspoon carom seeds
1 tablespoon Kasoori Methi
Salt to taste
1 tablespoon oil
Water as required
Ghee for applying
Let's Make paratha:
The first step is to prepare the filling.
To do this, finely chop a small head of grated cauliflower, green chilies,
ginger, and salt to taste, and mix them together in a bowl. Add fresh coriander
leaves and mix well. The filling should be dry and crumbly, with no excess
moisture.
The second step is to, make the dough for the paratha. In a large bowl, combine two cups of whole wheat flour, carom seeds, kasoori methi, salt to taste, and oil. Gradually add water to the mixture and knead it into a smooth, elastic dough. Cover the dough, and let it rest for 15-20 minutes.
To assemble the paratha, divide the dough into equal-sized balls and roll each ball out into a small circle. Place a tablespoon of the cauliflower filling in the center of the circle and bring the edges of the dough together to enclose the filling. Pinch the dough together to seal the filling inside and roll the ball out into a thin, round disc. Repeat this process with the remaining dough and filling.
Heat a griddle or a pan over medium heat and place a paratha on it. Cook for a minute or two, then flip it over and cook the other side until golden brown. Brush the paratha with a little oil or ghee and cook for another minute or two until crispy and cooked through. Repeat this process with the remaining parathas.
Cauliflower paratha can be served hot with
a side of yogurt or pickle, or with any other condiment of your choice. It is a
delicious and healthy breakfast option that is sure to leave you feeling
