Ridge gourd is a popular vegetable used in Indian cooking. It comes in two variants – one with a smooth surface and the other with a ridged surface. Ridge gourd vegetable, mostly availed during rainy seasons and quietly find in all sessional Locally, it goes by various names like “Turai” in Hindi, “Jhinge” in Bengali, “Beerakaya” in Telugu, and “Peerkangaai” in Tamil. It is a green fleshy vegetable having an inherently bland taste, After been delightfully seasoned with spices, to enhance its flavor. Despite not appealing to the taste buds of many people, Ridge gourd has many health benefits. It is rich in essential components like dietary fibers, water content, vitamin A, vitamin C, iron, magnesium, and vitamin B6. It is naturally low in calorie content, unhealthy saturated fats, and cholesterol. Furthermore, it is rich in antioxidants and alkaloid compounds, which regulate metabolism and eliminate toxins from the body.
I’m here making a tasty Ridge gourd recipe to make everyone's favorite, “TuraiMasala”
Ingredients
Oil - 3 tbsp
in dry spice-
3 nos dry red chilies
1 Bay leaf
a small stick of Cinnamon
1 tsp cumin seeds,
4 pods of black pepper
2 nos clove
3 tbsp curd
dry fenugreek leaves
7-8 pods garlic cloves dice cut
2-inch ginger chopped
2 nos medium size onion dice cut
2 nos green chilies, cut into small
pieces.
2 nos tomato, cut in cube shape
coriander leaves for garnishing

400g Ridge Gourd peeled & cut
upper & bottom part
Take the middle portion In the middle
portion gives 2 small cuts.
Prepare gravy masala-
now add tomato, onion, garlic, ginger,
and green chilly in a mixer grinder
and prepare the fine paste, then we
will start our further process
Turai masala recipe making- let’s get
started,
let heat up the wok (Kadhai)
add 3 tbsp oil (Sunflower oil) let it
heat,
once oil is heated, add dry red chili,
Bay leaf, cloves, black pepper, cinnamon, and cumin seeds all at once
Stir for a while.
keep the flame on slow,
after one minute, add 1/2 tsp turmeric
powder, 1/2 tsp red chili powder
Stir consistently for 30 sec.
Keep the flame on SIM only, otherwise,
it will burn.
add the fine paste prepared in a mixer
grinder
Stir it for a while.
add 1 tsp coriander powder
1/2 tsp Kitchen King Masala
1/2 tsp Cumin powder
1/4 tsp Garam Masala
Add 1/2 tsp salt to cook it fast...
Keep it on medium flame...
Keep on stirring,
Till the oil will come out from the
wok, the oil will be visible.
Now, turn the flame too slow.
Add the mixed curd, and make a creamy
curd paste.
Stir slowly, and mixed it properly
Up to the content will lose some
water, now oil is visible on content.
Now, add the pieces of Ridge Gourd.
Now coat the paste properly with a
soft hand on Ridge Gourd pieces.
Add a pinch of salt to taste.
cover it for 8-10 minutes
Check it, stirring it slowly, in stir
the content with a soft hand.
1-2 times (within 10 minutes), with
the use of a knife check. Whether it is cooked or not.
Now it’s ready, add some dry fenugreek
leaves, rub them on your palm & spread it in the whole content.
It will enhance the taste more &
more.
Now mix it, And now switch off the
flame.
Add the green coriander leaves, Mix it
well.
Our spicy, delicious Turai Masala is
ready to serve.
Serve it on a plate with Chapati,
rice, and paratha.
